cuppie cakes

i made cupcakes this past week. i had left over egg white from the cake i made for my grandparents anniversary. they were SO good! really! kim, the cafe manager, asked me for the recipe. that made me smile. it would have been even more awesome if i had made the recipe myself. haha. but unfortunately, it was from martha stewart DOT COM. not a fan of hers (her ideas -- yes) her -- no. i won't go into that opinon.

i made an amazing buttercream frosting. fluffy, and an awesome consistency. i let my hubby take a bunch to work and i brought a bunch to work and shared with my fellow dietetics students. it made me happy to know that they like my baking. boosts my self esteem a little.

i ate one of the cupcakes... right now i'm wishing i had saved some for the hubbs and i to eat. but i can always make more. mmmmm. good.

my man is thinking i'm doing something naughty right now since he doesn't see this blog. =) he's so cute.

cakes!

This weekend I am going to make cakes OR cupcakes. =) from scratch. Joy!! They will be decorated in a most gorgeous fashion, of course. I'm pumped. I made some cupcakes using a recipe I found online a few days ago, but they turned out like muffins rather than cupcakes, too dense. But I had a blast making them -- new recipe time! I plan on going to Barnes and Noble and buying the NY Times cookbook. I need something to do during spring break! My hubby will be eating good this week. Mmmhmmm. I'm excited, I want to perfect my baking and cooking skills (lets be honest, it may take a while) hah. But its fun regardless. If they turn out well, I will take some pictures. =)

Julie and Julia

I think I want to do a Julie and Julia type thing. The desire comes from my extreme lack of cooking. I fail to make meals at home, which makes me slow and less efficient at work. If I practice more (and make tastey foods for my family) I will be more effective. I have yet to decide what I should cook, or more specifically, where the recipes should come from. (Ideally, I'd make all the recipes in the cafe!) I do have a small baking book from the cafe, there are few savory recipes in it - so that doesn't make it a great choice, as I want to cook foods we can eat for meals. Ruminating...

Sunflower Seed Muffins

The best ever! Rolled oats and RAISINS!

Strawberry Chocolate Slices


Fantastic recipe, uses rolled oats, slivered almost, strawberry jam and chocolate chips (though I keep the chocolate chips out and substitute with another fruit.

Nutty Granola Squares


I love granola!! This recipe includes dates, cranberries, hazelnuts, and slivered almonds.

Roasted Herbed Turkey

This roasted turkey has been pumped full of herbs, specifically rosemary. The herbs are actually under the skin of the bird before cooking.

Eggs Sardou


These eggs make for a special brunch. The recipe has a bed of chopped spinach, with heated artichoke bottoms, topped with poached eggs and lightly drizzled in a low fat Hollandaise sauce.

Carrot Cake Supreme


My favorite guilty pleasure. Just a few nibbles of this, and I'm in heaven. This extra moist and incredibly rich cake make for an excellend dessert.

Nutty Granola Bars


Healthy granola coupled with chopped hazelnuts makes for a healthy and nutrient dense platter.

Don't Forget the Sprouts


All I have to say about this pretty dish is: Brussel Sprouts!! My favorite are roasted, tossed in a little bit of EVOO and sprinkled lightly with salt and pepper.

Time for Dessert

Lovely dessert with a creamy mouthfeel, yet a sweet crunch! Brie cheese, with an orange marmalade topping, covered with a good sprinkling of pecans.

What a Dish


A delicious meal! And most gorgeous placement. This has amazing eye appeal. Many different color combinations, shapes and sizes. A delectable fillet of fish topped with juicy blackberries and dainty carrots. Perfect!!
